Tina,

Paul Chartrand is not dismissive of people with allergies. His point is that sulfites are already covered under other laws and would still appear on any label where they are added. Anyone who wished to know, like yourself, would easily be able to find which wines had them and which did not. The battle over whether these should be covered under "organic" standards as well is a disagreement between two different groups of winemakers, each passionate about their point of view, and has nothing to do with arrogance. No shame here.

As someone who is highly sensitive to artificial sulfites, I take great exception to your desire to label all organic wines the same, without indicating which wines are adulterated. Using peanut allergies as a comparison is disingenuous and not very bright. If our regulators are swayed by your lobbying, I for one will never touch a domestic wine again, and I know many others who feel the same way. It is arrogant to be so dismissive of those of us with allergies, and not in concert with the organic movement as a whole. You should be ashamed of yourself!

From the article at this URL:http://www.ncbi.nlm.nih.gov/pmc/articles/PMC1566939/

The occurrence of inflammatory processes and of cancer in the human respiratory tract is intimately associated. One of the major factors in this is probably the recruitment of and stimulated activity of polymorphonuclear leukocytes (PML) in conjunction with the ability of these cells to convert various carcinogens to their ultimate active metabolites. In this study, we demonstrate that nitrite and sulfite, the major dissolution products of the environmental pollutants nitrogen dioxide and sulfur dioxide in water enhance the metabolic activation of trans-7,8-dihydroxy-7,8-dihydrobenzo[a]pyrene (BP-7,8-dihydrodiol), the proximal carcinogen of benzo[a]pyrene, to trans-7,8-dihydroxy-9,10-epoxy-7,8,9,10-tetrahydrobenzo[a]pyrene (BPDE) and tetraols, the corresponding hydrolysis products, in human PML prestimulated with 12-O-tetradecanoylphorbol-13-acetate

I am allergic to sulfites and only found out recently after I broke out in hives from drinking a glass of wine. I had a blood test done, which confirmed my allergy to sulfites. I have been looking for organic wines or wines which are made from organic grapes, but it has been very difficult to find them in local supermarkets, including Trader Joe's, Whole Foods and Wegmans. I am now looking for organic wineries in Virgina. Can you name any in the VA-MD-PA area?

Thank you so much for this information about sulfites. I learned exactly what I was looking for. I did not know what sulfites were? I thought that they were something like aspartame and really bad for you. Now I understand it's natural and not a chimical and that it's mainly bad for anyone who's allergic to it. I will try to switch to red wine from white after reading this though. Thanks again.
