Thank you for a great article that has clarified some questions i had. I just became recently familiar with the Demeter certification because I am launching a new line of nutritional bake mixes and was looking for organic sugar which led me to brazil and I found a producer that claims to have the demeter certification. it sounds as though the demeter is almost harder to get than just being organic. Do you agree? This producer also markets it&#039;s sugars as &quot;green&quot; which they say means they don&#039;t burn the cane fields before the harvest the cane thus protecting the top soil and the ozone. Are you familiar with this concept. I realize you are not a sugar grower but you mentioned you had done some work in costa rica which has some cane crops I believe. Any information you may have would be appreciated. I want to give my customers the best product possible. Although the price of organic grains are inhibitive for the initial products launch I want to go as unrefined as possible with what little sugar I am using which is about half of traditional cake mixes. I find the thought of being organic as well as biodynamic appealing.Thanks for your time
